I made a cheesecake today !
It was my first time to bake homemade cheesecake, so I was a little bit nervous to taste it and also to see Ray’s reaction after I made it.
There are many kind of cheesecakes, and I was looking for a cheese cake which is moisture and soft inside but not like raw creamy cheesecake.

But I couldn’t find it here in the USA. So I decided to make it by myself after found the recipe for it.
This is not heavy, or too sweet.

New York cheesecake or many other bakery stores cheesecakes are too sweet to me.
So glad, the taste came out successful.

Here is the recipe of the homemade cheese cake below,
it’s easy and simple.

Even though I‘m not good at baking cake or pies, I could easily do it , so I suppose anyone can make it as well.
Ingredients
* Cream cheese spread 250g
* Sugar 90g
* Heavy whipping cream 200cc
* Eggs 3
* Honey Grahams ( or cookies ) 100g
* Butter 50g
* Lemon juice 1 table spoon
* Flour 3 table spoons
* Baking pan 20cm - 22.9cm
* Baking sheet
* Mixer ( or juicer )

How to make it ?
1. Put honey grahams into a plastic bag.
2. Crush it with a pestle.

4. Put the crushed honey grahams into a bowl.
5. Melt some butter ( 50g ) with microwave and mix it with crushed honey grahams.
6. Put the mixture of butter and crushed honey grahams on the baking pan ( on the baking sheet )
7. Cool it down by putting it in the refrigerator about 30 minutes.
8. Put all the ingredients , cream cheese spread, sugar, heavy whipping cream, flour, lemon, eggs ( Eggs are good to shake before mixing with other ingredients ) into a bowl or juicer. And mix it until it gets creamy without bumps.
If you use a juicer it’s faster.
10. Pour it into the baking pan , on the honey grahams.
11. Set up the oven temperature about 350 degrees.
12. Bake it until the top part get brown color with a little separation. ( like the image above. ) It will take about 35 to 40 minutes.
Please check it after 30 minutes past, and make sure the top part doesn’t get too dark brown.
13. Cool it down.
14. After it cools down, heat up the knife about one minute, until it’s warm , and then cut it. This way will cut it more easily.
