I recently love eating this sweet food that Japanese call " Warabi mochi " which is made of 0 calories food psyllium in my coffee break time.
It's sweet food but I use Lakanto Monk Fruit Sweetener instead of sugar when I make it.
Lakanto Monk Fruit sweetener is 0 calories and 0 glycemic and very similar taste as normal sugar.
It is said it's derived from monk fruit, which looks like a small green gourd native to regions of China and Thailand.
It's not artificial so it is not bad for health so I feel comfortable eating it.
Warabi mochi is a food which is normally made of Kinako ( soybean flour) & sugar & warabi powder and it's one of my favorite foods.
However it's high calorie foods so if I eat a lot, it's easy to gain weight.
Because Warabi mochi flour is Starch and has sugar in it and is high calorie.
So I was not eating it.
and then recently I found the recipe of diet Warabi Mochi which is made of Psyllium and Lakanto and Kinako which has almost same taste as normal Warabi Mochi.
Psyllium is 35 calories for 10g , and lakanto is 0 calories, Kinako is only about 31 calories for 7g.
and I use about 30g for psyllium and 400cc water, so it's about less than 130 calories.
and I usually eat half or 1/3 at a time.
So total calories are about 117 to 178 calories .
It's much lower calorie than the combination of warabi mochi flour, sugar, kinako.
Besides, it's more healthy as well.
So I'm happy to find the recipe of diet warabi mochi.
Here is the recipe of Diet Warabi Mochi below,
Ingredient
* Psyllium - two table spoons ( about 30g)
* Mineral water - 400cc
* Lakanto - 1 table spoon ( about 15g)
* Kinako - 2 table spoons ( about 30g)
How to make it ?
1. Pour 400cc water into a pan.
2. Put 3 table spoons Psyllium into the pan and mix with water well. ( before heat it up )
3. Heat it up and simmer into gruel . ( simmer it about 5 to 7 minutes. )
4. Turn off the heating stove burner and cool it down.
5. Put it in the container. ( I always put saran wrap over the container )
6. Cool it down in the refrigerator about 2 or 3 hours.
7. Take it out from the refrigerator and cut it into small pieces.
8. In the different bowl, put kinako( about two table spoons ) and Lakanto( one table spoon ) into the bowl and mix it.
9. Put each piece of psyllium mochi into the bowl ( the Kinako & Lakanto powder ) and cover them with Kinako & Lakanto.
10. Put all of them in a dish.
Done !
Good to simmer it until it becomes like that ( the image above ).
and put it in the container after cooling down and then put it in the refrigerator for about 2 to 3 hours.
It becomes like that (the image above), and cut it into the small pieces.
It's good to drink a lot of hot ( or warm ) water when you eat this food to promote regular bowel movements.
It's very yummy !
Kinako -
