I made custard cream donuts recently.
These dough are very soft and fluffy.
and not so sweet.
Very very delicious !
I was not so crazy for donuts in the past because store donuts I've eaten were usually too sweet for me.
and I thought it's difficult to make donuts at home by myself without fermentation machine.
But recently I discovered that we can cook donuts without fermentation machine in youtube cooking video.
My husband loves donuts a lot especially soft & fluffy donuts.
So I thought lets' try.
If you are like me who love less sweet donuts, you will love these donuts.
How to make custard cream donuts ?
I got the recipes in two youtube videos.
One for the donuts, and another one for the custard cream.
You can use donuts and custard cream in the first video, but for custard cream, we prefer the taste of it from the 2nd video.
but both ways are fine.
Ingredients
[8 pieces of about 9cm]
Dough Ingredient
* Bread flour - 350g
* Egg - 1 ( room temperature )
* Milk - 160 ml ( warm milk )
* Unsalted butter - 40g ( room temperature )
* Sugar - 50g
* Salt - 6g
* Dry Yeast - 6g
Custard cream ingredient
* Egg Yolks - 2
* Milk - 200ml
* Unsalted butter - 15g
* Sugar - 30g
* Corn starch - 15g
* Vanilla essense - 1 tea spoon
✤ Tip from the youtube video,
* You can use plain flour, but the bread flour is softer.
* You can have strawberry jam or whipped cream instead of custard cream.
* You can use sugar powder instead of sugar on the outside of the donut.
It took about 4 to 5 hours to make it.
It's a long time but I felt it's fun to knead the dough.
How to make the custard donuts
Donuts
First, make the donuts.
1. Put an egg ( room temperature ) into the bowl and beat it well.
2. Add warm milk ( 160ml ) and dry yeast (6g) in it and mix them.
3. Add sugar (50g) , bread flour (350g) and salt (6g) in it and mix all of them with scapula, first.
4. and then, knead it by hand until it get smooth.
5. Add butter ( unsalted, room temperature, 40g ) in the dough.
6. Butter mixed in, knead the dough until it get smooth.
If you throw it and punch it, it get smooth faster.
7. after that, put it in a bowl and cover it with saran wrap.
8. Ferment in a warm place until swelling into 2 to 3 times the size.
( about 36℃ ~ 40℃ ) about 1 hour.
Custard cream
While fermenting the dough, make the custard cream.
9. Pour milk ( 200ml ) into a pan.
10. Add butter ( unsalted, 15g) into the pan.
11. Boil it until butter melts.
12. After turn off the fire and put it in another place.
13. Put 2 egg yolks in a bowl.
14. Add 30g sugar in it and mix with it.
15. Add cornstarch in it and mix with it.
16. after that put it into the pan which has milk with melted butter .
17. Mix it and turn on the stove and stir it over low heat unti it get thicker.
18. turn off the stove when it get thicker and creamy.
19. Pour the custard into different bowl and let it cool.
Dough
and then , come back to the dough.
20. 1 hour fermented dough.
21. Fold it inside to remove air bubbles from the dough.
22. Divide the dough into 8 equal parts.
23. Make each of them flat round shape , fold each one inside to form a round shape.
24. Pinch the back to straighten the wrinkles.
25. Put a cooking sheet on a plate and place all of them in it.
26. Let it rest at room temperature for about 30 to 40 minutes.
Cover with saran wrap over them.
27. after 30 to 40 minutes, those become chubby.
28. Fry them in hot oil. maybe 3 or 4 pieces together.
30. Turn it over when it turns brown.
31. Take out the donuts when those all become same brown color both sides.
32. Make space to fill the donuts with custard cream. using a long stick such as chopstick.
33. Put sugar in a bowl.
34. Put each donut in the sugar and spread the sugar evenly around the donut.
35. Put a piping bag in the long cup of glass.
36. Put custard cream into the piping bag.
37. Fill the donut with custard cream.
It's done !
I usually make 16 donuts at a time and after each donut get cooler, cover the entrance of the hole for custard cream with cooking sheet.
and then wrap it with saran wrap.
and keep all of them in the refrigerator.
When we eat, heat about 20 to 25 seconds in a microwave to make it softer.
It's very very yummy !!
